And ah, well. The temperature's a constant — though suns do cool over time, it takes billions of years depending on the size of the star, and how much fuel it has to consume. It wouldn't be a fluctuation that would happen within a day-night cycle — but when the sun's setting or rising, the light has to travel through more of the atmosphere before it reaches your vision than it does when it's directly overhead. You're not wrong that it appears visually different, though.
